2. Hydrate and fill your substrate bags consistently

5. Allow for full heat penetration

Large, dense bags, cold starting material, and tightly arranged loads may take longer. Smaller or lighter loads may heat more quickly.

Use suitable calibrated temperature probes or data loggers in representative bag centers, including likely slow-heating locations, to establish when the load reaches its target. Use only manufacturer-approved monitoring arrangements; do not route probe wires through a door seal or modify the vessel.

Heat penetration time is separate from holding time. Begin the required pasteurization hold only once the slowest-heating monitored substrate has reached the target temperature. Also confirm what triggers the machine's timer: a chamber-temperature timer may start before the bag centers are ready.

6. Cool before adding spawn

After completing the required treatment, follow the manufacturer's shutdown, pressure-release, and unloading instructions. Allow the substrate to cool to the inoculation temperature appropriate for your mushroom species before adding spawn.

Keep bags protected during cooling and use clean handling practices. Heat treatment does not prevent contamination introduced afterward.
